Avocado and prawns are a very delicious combination if you ask me, so why not try it out in wrap form? These wraps are very easy to make, quick and incredibly yummy!
Ingredients
Plain wraps (2 per person I would say)
2 very ripe avocadoes
a handful of cherry tomatoes
5 sundried tomatoes and a glug of the oil they come in
1 clove of garlic
1 big red onion
at least 250 g of prawns, cooked and peeled preferably (use more if you like prawns ;) )
1 pepper (green works quite well)
salt and pepper
paprika to taste (or chili)
olive oil
Start off by putting the avocado "flesh", cherry tomatoes, sundried tomatoes and their oil and garlic in a food processor and blend them together until they form a smooth guacamole. Chop up the onion and the pepper and fry off in a shot of olive oil, then add the prawns. Season with salt and pepper and a bit of paprika, or chili if you prefer, and assemble the wraps. Heat them up in a microwave for 30 seconds or so and smear the guacamole on top, then add the filling, wrap together and enjoy :)
