Baked Salmon

The main dish we had for Christmas was a baked salmon (I think I mentioned that in Poland you only eat fish at Christmas, which is on the 24th). I had seen the version that the Sorted guys did and decided to give it a go. It's incredibly easy, especially since you only have to prepare the salmon and then let it bake in the oven whilst you can concentrate on other things :)

Ingredients

1 orange
2 lemons
knob of ginger
1 side of salmon (about 1 kg or a bit more)
4 cloves of garlic
salt and pepper
olive oil

Preheat the oven to 200°C and slice the orange and lemons into slices. Peel the ginger. Wash the fish, then season with salt and pepper. Using a lot of aluminium foil, make a "parcel" out of the salmon, you basically need a thick layer at the bottom and then enough to cover the sides and top. Place the oranges and lemons around the salmon and grate the ginger on top. Scatter over the garlic. Drizlle with a bit of olive oil if you wish. Then bake in the oven for 30-40 minutes. Enjoy :)
