Rice Salad with Fish and Grapes

This salad is not your traditional leafy green salad, rather a very fancy but really easy rice salad with fish and grapes. We had it for christmas, and I only now managed to get around typing the recipe up :) Technically it is made with couscous I believe, but substitute for whatever you fancy (rice works really well :) ) Here you go!


Ingredients


1 cup of couscous/rice
2 cups of wate
smoked mackrel
grapes
1 pepper
2 eggs
parsley

For the sauce:

2 tablespoons of mayonnaise
1 tablespoon of crème fraîche
2-3 drips of tabasco sauce
paprika
salt
pepper
sugar

Boil the rice or the couscous, depending on which you choose, with the water. Set aside to cool, and in the mean time, boil the eggs, cut up the mackrel, the grapes, the pepper and then in the end the eggs. Assemble and sprinkle some parsley on top. For the sauce, whisk together all the ingredients and pour over your salad. Done! Enjoy :)
