Ingredients
1 whole broccoli
1 can of chickpeas
1-2 sweet potatoes, depending on size
2 cloves of garlic
olive oil
salt and pepper
herbes de provence
For the Yogurt dip:
Yogurt (also works with crème fraîche!)
a drizzle of lemon juice
paprika (the sweet one)
Peel and dice the sweet potatoes, rinse your chickpeas and cut up the broccoli into small florets. Chop up some garlic as well. Place them all in an oven dish,drizzle with olive oil and season with salt and pepper and herbes de provence. Bake in the oven for 25-30 minutes at 175° C, until everything has gone soft.
Serve with a yogurt dip if you like, which you can make by simply mixing together a couple of tablespoons of yogurt, a little drizzle of lemon juice and a bit of paprika. Enjoy! :)
