Bruschetta

This is a lovely quick and easy recipe, great for starters or just a quick snack inbetween. Probably not the "original" Italian way to do it, but it was very tasty :) This was a recipe made back in France, slowly blogging all of the remaining ones :) Hope you enjoy!



Ingredients

white or wholemeal bread (since I was in France at the time I used baguette)
4 tomatoes
1 red onion
garlic
olive oil
salt and pepper

optional:
balsamic vinegar
basil

I'm not sure whether for the traditional recipe you'd have to get the skin off the tomatoes, I tried for a couple but then simply left it and I still think it tasted great. So either start off by taking the skin off the tomatoes, or start chopping them up into small pieces. Also dice the red onion really finely. Place the onions and tomatoes in a bowl, season with salt and pepper and if you want to add in some basil.

Slice the bread into small pieces and grill it (or toast it if you don't have the grill option on your oven) and then rub it with garlic (be generous!). Place the tomato/onion mixture on top of each indiviual bread and drizzle a bit of olive oil on top. You could garnish it with some basil leaves if you wanted to. Otherwise, enjoy :)
