Italian Bread Salad

I'm not entirely sure why exactly this salad is called what it is called, but rest assured it is incredibly tasty! My godmother found the recipe online (here) and made it for a lovely barbecue, and because it is so good I decided to take some pictures and post it on here :)


Ingredients

half a baguette (or a ciabatta if you prefer)
100 g of Italian salami (the spicy one)
rocket (a whole packet)
150 g of cherry tomatoes
50 g of parmesan
olive oil
condimento bianco
salt and pepper
lemon
a sprig of rosemary

Heat up the olive oil in a frying pan, add in the rosemary, and add your salami to it. Once it's gone nice and crispy, take the salami out and place it onto a paper towel. Cut up the baguette and fry it in the remaining oil. Wash the rocket leaves and the cherry tomatoes, halve the tomatoes and place them in a salad bowl. Take the baguette out and leave to cool on a paper towel. Shave some parmesan or cut it up into pieces. Whisk together a bit of olive oil, a couple of tablespoons (3 or so) of condimento bianco, add a drizzle of lemon and season with salt and pepper. Add the salami, baguette and parmesan in and pour the dressing over the salad just before serving it. Enjoy :)
