Zebra Cake

This is a very delicious vanilla and chocolate cheese cake that I served at my birthday party :) The zebra pattern is actually not too difficult to achieve but may take a bit of time. Recipe found here (a very great cooking channel on youtube if you speak German :) )


Ingredients

For the base:
250 g of flour
100 g of sugar
150 g of soft butter, cut into pieces
a pinch of salt
1 egg

For the filling:
100 g of dark chocolate
3 eggs
a pich of salt
300 g of sour cream (Schmand technically but sour cream is the closest you'll get if you don't live in Germany)
250 g of quark (20% fat)
150 g of sugar
5 tablespoons of milk
the juice of half a lemon
1 packet of vanilla blancmange


For the dough, knead together all the ingredients until they combine to make a sweet pastry dough. Grease a 26cm baking tin and flatten the dough out to cover the entire bottom of the tin and about 3 cm on the sides. Using a fork, "stab" it a couple of times to make sure that it bakes evenly afterwards and place the tin in the fridge.

To prepare the filling, melt the chocolate in a water bath and let it cool a little. Separate the eggs and whip up the egg whites until they form stiff peaks. Whipping them with a pinch of salt makes it a bit easier, I also find that adding a bit of sugar right at the end will help prevent it from separating later on. Add the sour cram, quark, sugar, milk and the juice of half a lemon in a bowl and mix in with the egg yolks. Then add the packet of vanilla blancmange.

Divide the mixture into two even parts. Add the melted chocolate to one part. Take your tin out of the fridge and preheat your oven to 180° C. Now start making the pattern for the cake by firstly adding one spoon full of the vanilla filling and then literally right on top of the first one, add a spoon of the chocolate filling. Continue with this until you have used up all your mixture. They filling should spread out evenly in the baking tin. Bake in the oven for 45 minutes and then cover it with aluminium foil and bake for another 15. Take the cake out of the oven and let it cool before cutting it into pieces to serve. Enjoy :)
