Best Chocolate Cookies Ever!

Another one of those titles, I know, but again I promise you won't be disappointed with these cookies! The centre melts in your mouth and they just have the perfect texture and they're one of the most delicious cookies I have ever made :) Recipe found here: http://www.youtube.com/watch?v=DvIG7R8DOqU



Ingredients

300g of caster sugar
200g of butter
275 g of plain flour (add a bit of baking powder if you wish but I didn't)
1 large egg
75 g of cocoa
3 bars of chocolate (I used two milk chocolate ones and one bar of white chocolate)

Mix the caster sugar and the butter very well, if need be soften the butter in the microwave for 30 seconds first. Then add the egg and afterwards mix in the flour and the cocoa. If the dough is a bit too dry add a few splashes of milk. Chop two bars of chocolate up into small chunks and add to the dough. Start forming medium sized balls from the dough (about 6 cm in diameter) and space them out on a baking tray lined with baking paper. Leave a lot of space between them! Then break up the last bar of chocolate and place a piece of chocolate into the middle of each cookie (I made about 18 cookies from this amount of dough) and make sure it's covered in dough. Bake them in a preheated oven at 180° C for 10 minutes and let them cool a little until you can take them off the baking tray without them falling apart. They will be quite soft when they come out of the oven but they will become firmer! Enjoy :)
