Kartoffelpuffer (Potato "pancakes")

Last week, Christina and I organised a German evening at our residence and cooked German food for this occasion :) Below you'll find a recipe that has several names, I call it Kartoffelpuffer, and is usually eaten with apple purée or apple sauce :)


Ingredients

1kg of potatoes
2 eggs
salt
sugar
a bit of flour
rapeseed/sunflower oil
apple purée

Grate the potatoes and put them in a colander to get rid off any excess water/starch. Add in the eggs and add soem salt and sugar, and a bit of flour if the mixture is too fluid. Heat up the oil in a frying pan and spoon about a tablespoon of the mixutre in and fry from both sides until brown.

Serve with apple purée and enjoy :)
