Polish Traditional Salad (Salatka jarzynowa)

I am very sorry for the lack of posts recently, either I have been very busy with university or our kitchen in the residence was closed.. but last weekend we migrated to a different kitchen and held a Slavic evening, cooking lots of fine foods and inviting people over to taste them :) My contribution was this Polish traditional salad, incredibly easy to make and quickly consumed :)


Ingredients


4 potatoes
4 carrots
1 celery (the big round one!)
gherkins (about half a glass)
2 apples
1 tin of garden peas
4 eggs
parsley
mayonnaise
crème fraîche/yogurt
salt and pepper

Cook the potatoes, carrots and celery until soft, and boil the eggs until they are hard boiled. Let them cool and then proceed to chopping all the ingredients up into small pieces. For the dressing: mix about 8 tablespoons of mayonnaise with a bit of the water from the gherkins and 2-3 tablespoons of crème fraîche or yogurt if you prefer and season with salt and pepper as well as the parsley. Mix everything well. Either decorate with some parsley or whatever you have to hand or simply serve in a big bowl :) Enjoy!
