Placki Jablkowe (Apple pancakes)

I first ate these apple pancakes at my Polish grandma's :) I absolutely loved them and decided to make some for a dessert last week, when we had that Slavic evening :) This recipe was my orientation.


Ingredients


2 cups of flour
2 cups of milk
2 eggs
3 tablespoons of sugar (vanilla sugar preferably)
1 teaspoon of baking powder
2-3 big apples
Oil (rapeseed or sunflower oil)

Start off by peeling and coring the apples and slicing them into small wedges. Prepare the dough by mixing together the flour, milk, eggs, sugar and baking powder. Heat up the oil in a frying pan and make sure it is very hot before placing the first pancake in the pan (for example by dribbling a small amount into the pan and waiting for bubbles to form around the mixture). Place the apples in the pancake mixture and one by one, place the apples in the frying pan and fry the pancakes until golden brown from each side.

Sift icing sugar on top if you wish or serve as they are. You might want to put them on a bit of kitchen towel before serving to get rid of any excess oil. Enjoy!
