Easter Eggs in “Spring Sauce”

Although the colour might be a little bit off-putting, trust me, this sauce is most certainly going to finally bring spring around! It is wonderfully spicy and a perfect accompaniment to an Easter breakfast :)

This is what our breakfast table looked like today (without the cake and more food ;) ) :


I will post the recipes in the coming days :) This will include eggs in a "spring sauce", eggs with a salmon pâté, "jajka faszerowane" which I have no clue how to translate, a vanilla and chocolate "babka" (cake), and mazurek (traditional Polish cake) in 2 variants :) Hope you'll enjoy!!

Cinnamon Sponge Cake with Cherry Frosting

I’m very sorry I haven’t posted in a while – I was drowning in work and didn’t really find a minute to cook.. on the bright side – my housemates did and I can’t wait to show you their “Man Fried Rice” as they like to call it ;) Luckily, I handed all my essays in by Thursday so I had a bit of time to bake yesterday (plus it was my friend’s birthday, so what better excuse to cook something up :) I’ve had this idea for quite a while so I hope it will live up to your expectations as well!

Lasagne

A friend of mine recently told me about a lasagne she made with an unconventional sauce (she used honey and soy sauce among others), which reminded me that I hadn't made a lasagne in ages.. Well here you have it, a very scrumptious and delicious albeit more traditional variant ;) Takes about 45 minutes of preparation and another 30 minutes in the oven - but it is worth the wait!

Chicken Korma

I have been planning to cook up a chicken korma for a long time, watched several recipes on youtube, bought the ingredients and everything - but then essays got in the way.. nevertheless, after some time trying out different variations in the kitchen, here it is: a very tasty chicken korma!

Fruit Sauce

This fruit sauce can be used either as a topping for cheesecakes, with ice cream or with panna cotta for example. It has that little edge to it and I find it adds so much to the dishes! If you want it to set properly, i.e. on a cheesecake, add 2 leaves of gelatine to the mix, otherwise leave them out.


Vanilla Cheesecake

This lovely vanilla cheesecake is a "no bake" cake, as it just needs to set in the fridge. I have tried out a different blend of soft cheese and so far I think it has worked out very well! The fruity sauce on top just adds that little extra - I'm sure you will enjoy this (and so will anyone who will get a chance to have a bite!)!

Avocado Spaghetti

These avocado spaghetti are quite different to the normal tomato sauce you might know, but this is a lovely take on a pasta sauce! It doesn't take long at all - in the time the spaghetti are boiling away, your sauce will be ready :) I found this recipe here and changed it a little to match what we already had in the cupboards.

Blueberry and Walnut Muffins

I've had these blueberry and walnut muffins at my friend Aysa's the other week and decided to recreate them at home :) These are the type of muffins that could be classified as "healthy" ;) Not only are they fruity and nutty, but I also used wholemeal flour, which makes them at least that tiny bit healthier :) The recipe will make 12 normal sized muffins, or about 16 mini muffins.

Mushroom Risotto

Opening up the fridge today I discovered that we still had some white wine and some mushrooms left, so I decided to cook up a mushroom risotto for lunch. The wine really does make a difference (normally the wine in our house is used for other purposes and I hardly ever integrate it in cooking), so I would strongly advise you not to omit it! The risotto turned out really creamy and the flavours worked out really well!

Nectarine Tartelettes

When I went past the grocery store the other day, I saw that it was finally the season for nectarines, so I bought a couple and decided to whizz up little nectarine tartelettes :) What's more, I have never tried to make a crème pâtissière beforehand, so why not add one to the other? I have to say, it turned out amazingly delicous and I would definitely recommend you to try it!

 

Banana Dessert

This indulgent banana dessert came about as we ordered too many bananas yesterday.. turns out that instead of about 5, we ended up having more like 30 flying around our kitchen, so what better way to clear that up and enjoy something quick, easy and refreshing :)


Thai Curry

This thai curry dish is one of my favourites! It's simple enough to not make your head burst with lots of instructions to follow, and can be cooked up in about 30 minutes altogether - very appealing if you don't have much time to spare between lectures..
