These avocado spaghetti are quite different to the normal tomato sauce you might know, but this is a lovely take on a pasta sauce! It doesn't take long at all - in the time the spaghetti are boiling away, your sauce will be ready :) I found this recipe here and changed it a little to match what we already had in the cupboards.

For 3 people (or 2 hungry ones) you will need
250 g of spaghetti
3 ripe avocados
1 teaspoon of garlic paste (or 1 clove of garlic)
2 tablespoons of lemon juice
1 tablespoon of olive oil
4 sundried tomatoes
6 baby plum or cherry tomatoes
Salt and pepper
optional: parmesan and olives
Boil the spaghetti in lots of salted water until al dente. Spoon out the avocados into a blender. Add the garlic paste and the lemon juice. Season with salt and pepper and add the olive oil. I also added 2 tablespoons of the sundried tomato oil and a bit of thyme. Blitz it all up until you get a smooth paste. Cut both the tomatoes into small pieces. Drain the spaghetti and put them back into the pan, mixing well with the avocado sauce. Garnish with the tomatoes and grate some parmesan on top if you wish. Enjoy :)
