Blueberry and Walnut Muffins

I've had these blueberry and walnut muffins at my friend Aysa's the other week and decided to recreate them at home :) These are the type of muffins that could be classified as "healthy" ;) Not only are they fruity and nutty, but I also used wholemeal flour, which makes them at least that tiny bit healthier :) The recipe will make 12 normal sized muffins, or about 16 mini muffins.


For 12 muffins you will need

75 g of soft butter
75 g of sugar
1 egg
150 g of wholemeal flour
1 teaspoon of baking powder
125 ml of milk
1 teaspoon of vanilla flavouring
125 g blueberries
50 g walnuts


Whisk together the butter and the sugar until light and fluffy, then add the egg and continue whisking. Mix the flour with the baking powder and add a 1/3 of it to the mixture, alternating with about 1/3 of the milk. Continue to do so untill all the ingredients are combined. Flavour with a bit of vanilla and lastly add the blueberries and chopped up walnuts. Be careful when stirring those in, as the blueberries may lose their shape. Spoon the mixture evenly into muffin cases, covering about 3/4 of the case. Bake in a preheated oven at 175° C for 20-25 minutes until golden brown. If you are unsure whether the muffins are cooked, simply "stab" them with a toothpick - if it comes out clean, they're ready to be taken out of the oven. Enjoy :)

 

Optionally, you could melt some chocolate and pour over the top, like in the photo below :)
