Shortbread Cookies

Sorry for the delay in uploading these, the past weeks have been pretty hectic and I also travelled back home for christmas :) Nevertheless, I hope you will still have some time to try these easy shortbread cookies out (or Butterplätzchen as Germans call them) :)
The ratio is always 3:2:1:1, flour, butter, sugar, eggs so just calculate the amount that you will need :) The batch that I did was enough for about 4 baking trays full of cookies.



Ingredients

300 g of flour
200 g of butter
100 g of sugar
1 egg
1 sachet of vanilla sugar
cinnamon if you like
you could also add cocoa powder for a chocolatey touch
1 egg yolk mixed with a bit of milk

for the icing:
icing sugar
lemon juice and water

Knead all the ingredients for the dough together. Form into a ball and wrap in clingfilm. Place in the fridge for at least 30 minutes, preferably an hour.


After letting it cool, roll the cookie dough out thinly (abour 0,3 cm I'd say)


Then cut out shapes that you like (we only had a heart cutter):


Place them on a baking tray and brush with the egg wash.You can also leave this step out if you're planning on decorating them later on anyway.


Let them bake for 7-10 minutes at 175°C, depending on how soft you want them to be.

Take them out of the oven and let them cool. In the meantime, whip up some icing by mixing icing sugar with equal amounts of lemon juice and water until it forms a thick icing. You could also mix in some food colouring if you fancy :)

Then get onto decorating, and if possible have some lovely helpers to do just that:
