Vanillekipferl

There are tons of different recipes for vanillekipferl, either using just a shortbread cookie dough and then covering the little moon shaped cookies in vanilla sugar once they've come out of the oven, or ones that also mix in some nuts, like this one :)


Ingredients

280 g of flour
80 g of sugar
200 g of butter
100 g of hazelnuts
50 g of sugar to coat them
2 sachets of vanilla sugar to coat them


As with the shortbread cookies, mix all the ingredients together and knead into a cookie dough. Form into a ball, cover with clingfilm and leave in the fridge for an hour. Then roll out into a sausage shape of about 5 cm in diameter and cut about 1 cm wide discs. Form these discs into half moon shapes and place onto a baking tray.

Bake for 10-15 minutes in the oven (depending on how soft you want them to be), I did 12 minutes at 175°C.

Then coat them in the sugar mixed with the vanilla sugar and leave to cool completely.
