Courgette “Röstis”

Unfortunately, I have no other way of describing these delicious little “Röstis”, they are sort of pancakey shaped, but taste a lot different! It’s quite well known in Germany, though most people do Röstis using potatoes – I decided to give it a different twist with these courgette Röstis :)
 


Ingredients

3 courgettes
2 carrots
1 egg
3 tablespoons of flour
salt and pepper
mixed herbs
oil
sour cream and chive dip to serve
spring onions to garnish if you have them at hand

Grate both the courgettes and the carrots finely and place them in a sift. Add some salt (about 2 teaspoons) and wait till they start losing their water. Then squeeze them out using a paper towel and get as much of the liquid out as possible. Place them in a bowl and mix in with the egg and the flour. I used two eggs when I did mine, which turned out fine, but I reckon one egg will be enough. If not, add another one :) Season with salt and pepper and lots of mixed herbs (Italian style seasoning works well!) and heat up a frying pan. In a bit of oil, fry them on both sides until they turn nicely brown. This takes up to 5 minutes on each side. Serve with a sour cream and chive dip or make a yogurt dip (recipe to follow) and garnish with spring onions if you like. You could also add the spring onions to the mixture beforehand.
