Great Banoffee Pie

Banoffee Pie is one of my favourite cakes that require no baking - very easy to make, very delicious and the combination of toffee, banana and chocolate is heavenly!


Ingredients for a 11 x 9 inch tin

200 g of digestives
100 g of butter
toffee (either by boiling a tin of evaporated milk for 3 hours or see my toffee recipe here)
2 bananas
300 ml of double cream
10 g of chocolate to sprinkle on top

Blitz up the digestives in a food processor and combine them with the melted butter. Place this mixture in the bottom of your tin and cool for at least half an hour. Either make toffee yourself or simply boil a tin of evaporated milk for 3 hours. If you use this method, make sure that the tin is always covered in water and that it is boiling! Pour the toffee on top of the base and then cut up the bananas and place them on the toffee. Whip up the cream until you get stiff peaks and spread on the banoffee pie. Sprinkle the grated chocolate on top and enjoy :)
