Vegetable Soup

Do you ever buy those frozen vegetable bags, use a bit up and then don’t know what to do with the rest? Well here’s a recipe that uses up all of those forgotten vegetables in your freezer by transforming them into a delicious soup :) Works with literally all kinds of vegetables, depending on your taste of course!

Ingredients

at least 500 g of frozen vegetables (mixed preferably)
2-3 potatoes
any other vegetables that need to be used up (carrots for example)
1 l of vegetable stock
salt and pepper
herbs (I’d go for generic mixed herbs :D)
crème fraîche

No need to defrost the vegetables, they will do so while you cook them. Throw them into a big saucepan and cover with the vegetable stock. Peel and cut the potatoes into small pieces and add to the soup. Let it bubble away for at least 25 minutes, a bit longer won’t do any harm. Then blend it all together until it reaches your desired consistency and season it with salt, pepper and herbs. Serve with crème fraîche and some bread and enjoy :)
