Pasta with Spinach, Tomatoes and Bacon

I think this dish is one of Tish’s favourite ones if I am not mistaken, and I promised I would post the recipe so that she could recreate it when I’m gone. The guys like it too, mainly because it contains bacon ;) This literally takes 10 minutes, start boiling your pasta and when it’s ready, your sauce will be too!
 

Ingredients

pasta (about 100 g per person)
250 g of bacon
a big packet of spinach (300 g)
250 g of cherry tomatoes
500 g of crème fraîche (you can use a bit less if you don’t like it as creamy!)
salt and pepper
mixed herbs

Start off by cutting the bacon into small pieces and frying it off in a frying pan. No need to add any oil! Start boiling your pasta. Cut the cherry tomatoes in half and fry them with the bacon, you might need a dash of oil here. Then add the spinach and let it wilt down. Lastly, add as much crème fraîche as you like to make a nice and creamy sauce. Season with salt and pepper and mixed herbs. Serve with some grated cheese if you wish. Enjoy! :)
