Aioli

Aioli is a very garlicy dip, goes very well with baguettes or anything that needs a touch of garlic really :) I served it at the barbecue :) I followed this recipe.

Ingredients

3 cloves of garlic
1 egg yolk
250 ml sunflower oil or rapeseed oil
1 teaspoon of lemon juice
salt and pepper

Make sure you use a fresh egg! Place it into a bowl. Peel and crush the garlic and either chop up very, very finely, or use a mortar and pestle to make it into a paste by adding salt. (or use garlic paste ;) ) Add the garlic to the egg yolk and add the lemon juice as well. Add in the oil, drop by drop in the beginning, and mix in very well. I used the mixer on the lowest setting at the beginning, afterwards I would recommend whisking by hand. If you add too much oil at a time, the mayonnaise (which is essentially what it is) will not form. Only add in more oil at a time literally at the end, when you see the mayonnaise coming together! Overwhisking will turn into the mayonnaise you can see in my picture, it still tastes fine but it may form lumps. Season with salt and pepper at the end and enjoy :)
