Red Onion and Tomato Tartelettes

These red onion and tomato tartelettes are a lovely starter - I stole the idea from my friend Berni, hope she doesn't mind :) But I simply had to recreate them at home after I have tried them at hers! They're absolutely delicious and quite variable I would say :)



Ingredients

24 slices of white or wholemeal bread
butter
4 red onions
250 ml of red wine
300 g of mushrooms if you like
250 g of cherry tomatoes
250 g (or more) of cheddar
salt and pepper
olive oil

Using a large glass, cut out circles from the bread and butter one side. Place the bread with the butter side down into a muffin tray trying not to break them and so that they form a little basket. Cut the onions into small pieces and fry them off with a bit of olive oil in a sauce pan, then after about 5 minutes add the red wine and let them simmer. Chop up the mushrooms (if you don't like mushrooms, substitute them with more onions and cherry tomatoes) and place them in the sauce pan with the onions. Same goes for the cherry tomatoes. Grate the cheese and mix in with the rest. Leave a bit of cheese to sprinkle on top. Place the filling into the bread moulds and top off with some cheese. Bake in the oven for about 10-15 minutes at a 180°C and enjoy! :)
