Chicken Thighs with Mediterranean Vegetables

Another "shove it in the oven and don't worry about it" recipe - chicken thighs with mediterranean vegetables :) Quite easy to do I would say, can be made into an impressive dish, and very tasty :) Also, when you buy a whole chicken it's sometimes cheaper than buying just the chicken thighs (and you will have the chicken breasts too!) so that might be worth checking out at your local supermarket / butchers :)


Ingredients

chicken thighs
olive oil
salt and pepper
mixed herbs (thyme, rosemary, oregano)

courgette
aubergine
pepper
sweet pepper paste
tomato puree
chopped tomatoes

rice

Marinate the chicken in the oil and the herbs, and season with salt and pepper. Bake in the oven for 45-60 minutes, to make sure it's completely cooked and until it reaches the stage of brown you'd like :) In the mean time (as in the last 15 minutes or so), cook up the rice and chop up the vegetables. Fry the vegetables off in a shot of olive oil and after 5 minutes or so, add in the chopped tomatoes, the tomato puree and sweet pepper paste, as well as the same herbs you used for the chicken. Simmer until the chicken is ready :) Serve everything up and enjoy :)
