Pancakes with Strawberries

A nice and reasonably light summer dish - pancakes with strawberries :) I haven't found a fail-proof recipe for pancakes yet, but this one is pretty good :) Disclaimer: this is not an American style pancake, rather closer to a French crêpe, however, not thin enough to be called a crêpe in my opinion, so there you go :D



Ingredients for 10 pancakes

1 1/2 cups of flour
2 eggs
2/3 cup of milk
2/3 cup of sparkling water
a bit of sugar

strawberries

Whisk together all the ingredients for the pancakes and make sure they don't form any lumps. If you have a non-stick frying pan, I find that you don't need to use butter or oil to grease it, but feel free to do so if you wish. Fry the pancakes until they reach your desired shade of brown and place them on a plate. Cover them with a kitchen towel, this will keep the moisture in! (Even if they appear to be very solid at first, I guarantee that with this method, they will be lovely and soft and elastic!)

Chop up the strawberries, sprinkle a bit of sugar on top and serve. Enjoy :)
