Baked Salmon with a Pesto Crust

This salmon tasted absolutely delicious, the green pesto was good company - definitely worth trying out! Plus it's one of the dishes that you can just put in the oven and forget about, which saves a lot of time and hassle in the kitchen :) Did I mention it is an easy recipe as well?


Ingredients

salmon fillets
about 2 tablespoons of green pesto for each fillet
some grated cheese (cheddar or parmesan)
vegetables to go with it (green beans work brilliantly)
rice

Simply spoon the pesto onto the salmon fillets and spread out evenly. Grate some cheese over the top and bake in the oven for 30-35 minutes. In the mean time, cook up the rice and the vegetables, assemble all together and you're done :) Enjoy!
