World's easiest and best muffins!

I kid you not, these are the easiest and yet best and tastiest muffins EVER! Another great point - if you use soy milk, they're vegan too, so what more can you ask for? You can vary this recipe according to your taste, from adding other fruit to vanilla or chocolate flavours or caramel and so on :) I have since discovering this one (thanks Aysa!) not made a different recipe (I will try out others too but for now I am definitely sticking with this one and it will be my go-to recipe forever :D)

The version below was with blueberries:


For 24 small muffins (or 12 normal sized ones) you will need

1 1/2 cups of flour, preferably wholemeal
2 teaspoons of baking powder
3/4 cup of sugar, brown sugar works very well
1/2 cup of milk
3 tablespoons of vegetable oil
splash of vanilla extract

then add to taste:
handful of raspberries or blueberries or any other fruit you like

or make chocolate muffins by adding:
3 tablespoons of cocoa powder
50 g of grated or chopped chocolate (or just the chocolate if you use white chocolate for example)


In a bowl, mix together all the ingredients using a wooden spoon (this takes about 2 minutes) and then add either fruit or chocolate or whichever flavour you want. Distribute the mixture between the cupcake cases evenly and bake in the preheated oven at 180° C for 20 to 25 minutes, depending on your oven and the size of your cupcake tin. Enjoy :)

  1. These turned out really well, despite my doubting moments over the amount of baking powder and how thick the mixture was. Makes loads too! Will definitely make again.

  3. I have just realised that you were right about the amount of baking powder being so high - it should be 2 teaspoons, not 2 tablespoons. Have amended that in the recipe, thanks a lot for your comment!!
