Ingredients
500 g of green asparagus
500 g of strawberries
rocket (a packet or a little less)
100 g of pine nuts
parmesan if you like
For the dressing:
about 5 strawberries
2 tablespoons of olive oil
1 tablespoon of balsamic vinegar
1 teaspoon of lemon juice
1 teaspoon of honey
salt and pepper
Snap off the woody bits of the asparagus - if you're unsure how to do it: simply hold the lower third of the asparagus with both hands and gently bend it down, it will snap off easily. Cut the asparagus into 3-4 cm chunks and fry them off for about 5 minutes in a shot of olive oil. Season with salt and pepper. They should be nice and soft once they have coloured a little. Also toast the pine nuts (no oil needed!) until they brown. Wash the strawberries and cut out the green bits, then cut into halves. Wash the rocket.
For the dressing, blend the strawberries with the olive oil, balsamic vinegar, lemon juice, honey and salt and pepper. Either arrange everything on a plate or throw it all together into a salad bowl and pour the dressing on top :) Done! Enjoy :)
