Cauliflower Cheese

This is quite a simple recipe for a nice side dish and an English classic - cauliflower cheese. Hope you enjoy! The quantities of the cheese sauce you make depend on the size of your cauliflower and the sauce to cauliflower ratio you like, so please only see this as a guideline :)


Ingredients

25 g of butter
25 g of flour
250 ml of milk
150 ml of vegetable stock
250 g of grated cheddar
1 cauliflower
salt and pepper 

Make a white sauce using the butter and the flour, as in melt the butter in a sauce pan and when bubbling away, stir in the flour and let it simmer for 2 to 3 minutes. Then add the vegetables stock and the milk and whisk in well. Wait a little until it starts to thicken up and add in the grated cheddar. Boil the cauliflower cheese in salted water for 5 minutes, then strain and place in an ovenproof dish. Add the cheese sauce and sprinkle with some more cheese if you wish. Bake in the oven for 15 minutes and enjoy :)
