Chocolate Chip Cookies

These chocolate chip cookies are absolutely amazing and gone within moments once you take them out of the oven :) They’re very adaptable too, you could put some cranberries and nuts on top if you preferred that to chocolate for example :)



Ingredients (this makes about 25 cookies depending on size)

200 g of butter
300 g of white sugar or golden sugar
vanilla sugar or vanilla extract
2 eggs
300 g of flour
1 teaspoon of baking powder
150 g of chocolate of your choice

Beat the butter until light and fluffy and then add in the sugar and continue beating until they form a pale mixture. Add in the vanilla sugar or vanilla extract and then whisk in one egg at a time. Mix the flour with the baking powder and add to the batter. Chop up the chocolate (may be any combination of white, milk or dark) into small chunks and add them in. If you want to make them extra chocolatey, you could also add a tablespoon of cocoa powder. Using 2 tablespoons, shape the cookies into small balls and lay them onto your baking tray (lined with baking paper). Flatten down with the spoon. Make sure you spread these out, as they will become bigger quite considerably whilst baking! Bake for 8-10 minutes at 180° C in the oven until the edges are beginning to brown, or if you prefer cookies a bit more well done, bake for 12 minutes. The first option will give you very chewy cookies. Enjoy :)
