Baked Salmon with a Pesto Crust

This salmon tasted absolutely delicious, the green pesto was good company - definitely worth trying out! Plus it's one of the dishes that you can just put in the oven and forget about, which saves a lot of time and hassle in the kitchen :) Did I mention it is an easy recipe as well?

Chickpea, Spinach and Tomato Curry

This is a great curry consisting of chickpeas, spinach and tomatoes. The combination worked really well and topped off with some coriander, this is a perfect easy lunch! (plus it is ready in no time at all!)

Indulgent Chocolate Cupcakes with Raspberry Frosting

In the time it took my friend to attempt to restore my natural hair colour, I decided to whip up some cupcakes, seeing as I had guests coming over in the evening anyway   :) I went for a chocolate base and a raspberry frosting, but I am certain that other combinations would work as well – such as vanilla and raspberry or either of those with strawberry or any other type of berry.

Delicious Veggie Stuffed Aubergines

Stuffed aubergines are a great thing to cook when you want something to shove in the oven and not worry about it. Plus they’re great, because you can vary the fillings so much! From mince stuffed aubergines that I usually combine with rice, to veggie ones of all different kinds, you can literally do whatever floats your boat :) You could also stuff peppers instead of aubergines!

Cake pops are ideal if you have a bit of sponge cake left over, or if you want to serve small portions of dessert. You can make them in a lot of different flavours by adding different jams, if that’s the method you are going to pursue. I will explore two different methods below.

Spring Vegetable Quiche

This quiche tastes like spring - which has finally arrived in this part of the country as well :) You can literally use any vegetables you like, I used sweetcorn, courgettes and carrots, but I have tried versions with spinach and mushrooms or other combinations before and I can tell you - they're absolutely fab!

Cinnamon Rolls

During my stay at home, I told my mum that I would like her to buy some yeast so that I could try out some more dishes - well she did buy yeast, however, quite a lot more than I anticipated.. Either way, I decided to go for something that will most certainly work out, so I made some delicious cinnamon rolls. I have tried several recipes I found online, and I have to say I keep coming back to this one! Technically, it's for cocoa rolls and without frosting, so I'll show you my version below :

Enchiladas

These enchiladas are basically chili con carne in wraps, baked in the oven – but nevertheless, they are absolutely delicious! I tend to leave out the chilli as my family doesn’t like it too spicy, and I don’t either, but feel free to add more :)

Pierogi

Pierogi are Polish dumplings and may be filled with lots of different kinds of flavours, these ones are called “Russian Pierogi” (Pierogi ruskie) and are filled with potatoes and twaróg, which is sort of a cottage cheese but not really :D You’ll find it in most Tesco’s nowadays in the Polish section :) I followed this recipe: http://kotlet.tv/ruskie-pierogi

Mazurek

Mazurek (mazurki in the plural version) are cakes that have a shortcrust pastry base and some kind of gooey filling on top - usually chocolate or toffee, but poppy seeds are also an option. For Easter, I made both chocolate and toffee, so here are the recipes for both :)

Orange Duck with Carrots, Potatoes and Orange Sauce

This duck is filled with oranges which makes it very nice and citrussy. Served with carrots that have a little more of a sweet taste, some potatoes and a lovely orange sauce, this makes for a really delicious lunch or dinner, whichever opportunity to cook this you prefer. The duck will be roasted for about 3 and a half to 4 hours in total, depending on the size of your duck, so plan ahead for this dish. But I promise, it will be absolutely worth it!

Vanilla and Chocolate "Babka"

The shape of this cake is particular and mostly baked at Easter. Some of the doughs involve yeast, but since that would take some time to prove, I decided to go for a normal batter. And since vanilla and chocolate flavours have been requested, this is what it turned out as :)

Eggs "Faszerowane" Style

This is a typical, traditional Polish dish that we serve for Easter. You can virtually add anything as long as you put the mixture back into the shells and fry it off in the frying pan with a breadcrust. So, go crazy ;)

This salmon pâté goes really well with eggs for your Easter breakfast, or more generally with any type of bread. It is quite refereshing and more than enjoyable - the lemon gives it that little kick as well :)
