Tasty Cake Pops

Cake pops are ideal if you have a bit of sponge cake left over, or if you want to serve small portions of dessert. You can make them in a lot of different flavours by adding different jams, if that’s the method you are going to pursue. I will explore two different methods below.


Ingredients
Method 1:
Sponge cake (if you don’t know how to make one, look at my muffin recipe and simply adjust the flavour, i.e. you can add some vanilla extract instead of the berries or make it chocolatey by adding grated chocolate and cocoa powder)
Cream cheese (this depends on how much cake you have, if you use a batter for 12 muffins, you will need about 150 g of cream cheese)
Butter (again, depends on the amount of cake, I would say about 50 g if you add 150 g of cream cheese)
Chocolate (at least 200 g, use different flavours if you wish)
Decorations, if you fancy
Sticks (either plastic or wood)
Styropor if you have

Method 2:
Cake or digestive biscuits
Butter (if you are going for the biscuit variant, use 200 g of digestives and 100 g of butter)
Jam in the flavour you want (for the measurements above, 100 g)
more butter (for the measurements above, about 25 g)

First of all, you can either use a leftover cake, make a sponge cake, or do the digestives alternative. You can also choose whether you want to form the cake pops by using the cream cheese or the jam method. Both work absolutely fine, and it simply depends on your taste :)
For the cake base, follow the muffin recipe and adjust the flavours. Wait until the cake has cooled and then crumble it up into very small bits, either using your hands or with a fork. Then add the cream cheese and the butter, and see whether the consistency is sticky enough to form small cake pops. If it is, form the balls by rolling the dough inbetween your palms and place on a plate. If it is not, add more cream cheese. Melt the chocolate and dip the sticks into the chocolate first, and then into the cake pops. Put them in the fridge to let them cool down for at least 30 minutes. Then, melt some more chocolate and pour the chocolate into a small glass. Cover the cake pops in chocolate and place them in the styropor. Decorate them according to your wishes. Done :)

For the digestives option, crumble up the digestives (either bash them with a rolling pin once you have placed them in a resealable bag or use your food processor) and mix them with the melted butter until they combine nicely. Then add the jam and the butter until they form a mixture that is stick enough to form balls. Proceed by forming the balls and stick a chocolate covered stick in. (The stick only needs a bit of chocolate at the end of it!) Place them in the fridge to let them set. Melt more chocolate and cover the cake pops in chocolate. I find it easiest to dip them in the chocolate and then turn them around a little bit to let the excess drip off. Stick them into styropor or glasses and decorate them. Now that you’re done, enjoy :)
