Eggs "Faszerowane" Style

This is a typical, traditional Polish dish that we serve for Easter. You can virtually add anything as long as you put the mixture back into the shells and fry it off in the frying pan with a breadcrust. So, go crazy ;)

To fill about 14 egg shells, you will need

4 hard boiled eggs
4 mushrooms
2 spring onions
2 slices of ham
1 knob of butter
breadcrumbs

Dice all the ingredients bar the butter into small pieces and mix them up in a bowl. Combine with the butter to make it stick together. Place the mixture into the egg shells and pat down gently. Then press the shell with the mixture side down into some bread crumbs and fry in a pan in butter for 3 minutes. (I left mine in for a little too long as I was focussing on the other dishes :/ ) Enjoy :)
