Summer Strawberry Tarte

This is a very delicious summery strawberry tarte with a puff pastry base and a crème pâtissière as a filling, a recipe once again presented by my friend Hendrik :)



Ingredients for a 10 inch baking tin


1 packet of pre-made puff pastry
500 g of strawberries
1/2 litre of milk
1 vanilla pod
4 egg yolks
60 g of cornflour
120 g of sugar
60 g of soft butter

Mix the cornflour, half the sugar, 2 tablespoons of milk and the egg yolks. In a sauce pan, place the rest of the milk, the other half of the sugar and the scraped out vanilla pod, as well as the vanilla seeds and heat up. Then slowly combine the egg mixture with the milk mixture by pouring it into the saucepan, whilst constantly stirring. Bring up to a heat again until it thickens. Add the butter and whisk thoroughly.  Pour the crème pâtissière into a bowl and cover with clingfilm, letting it cool for an hour.

Preheat the oven to 210° C and place the puff pastry base into your baking tin. Prepare the base by stabbing it with a fork and blindbake in the oven for 10-15 minutes. Let it cool and then assemble the tarte. Gently place the crème pâtissière on top of the base and put the washed and cut in half strawberries on top. Garnish with a sprig of mint if you have one and enjoy :)
