Turkey Ragout Under A Potato Topping

I have made this turkey ragout several times now, and everyone who has had some found it lovely :) Hopefully you'll do too once you try it out :)


Ingredients

500 g of turkey breasts
1 onion
300 g of carrots
300 g of leeks
1 glass of white wine
500 ml of vegetable stock
200 ml of single cream
400 g of potatoes
100 ml of milk
knob of butter

Start off by chopping all the vegetables and the turkey breasts into small pieces as this will save you lots of chaos later on - trust me, I have been there ;) Peel the potatoes and cook them. Fry the onions and the turkey breasts in a large frying pan and once both of them are soft. Then add the carrots and the leeks and fry them for a little while. Add the white wine and let it bubble away. Add the vegetable stock and the single cream and stir in well. Let it simmer for 10 minutes. In the meantime, the potatoes should have softened, so mash them up with the milk and the butter. Place the ragout into an ovenproof dish and cover with the mashed potatoes. Then bake in the oven until the top browns a little at 180°C. Enjoy!
