Chickpea, Spinach and Tomato Curry

This is a great curry consisting of chickpeas, spinach and tomatoes. The combination worked really well and topped off with some coriander, this is a perfect easy lunch! (plus it is ready in no time at all!)


Ingredients

1 tin of chickpeas
1 bag of spinach
1 tin of chopped tomatoes
handfull of cherry tomatoes
1 tin of coconut milk (optional, otherwise simply use another tin of chopped tomatoes)
2-3 tablespoons of mild curry paste
tiny bit of oil
coriander
rice

Start off by boiling the rice. In a tiny bit of oil, fry off the curry paste. Then chop the cherry tomatoes in half and add them to the curry paste. Also add the tin of chopped tomatoes (I like the combination of both but feel free to only use chopped tomatoes if that is what you have in the kitchen). Add the drained chickpeas and let it bubble away. Add the coconut milk and let it simmer for 5 minutes. Lastly, add the spinach and let it wilt. Season with salt and pepper if you wish and serve with rice. Garnish with some coriander, if you like the taste, and enjoy :)
